Gravy: Onion Vegetarian

YIELD 2 cups

INGREDIENTS

DEEP SAUCEPAN:
2 tbsp unsalted butter
1 small red onion, halved and thinly sliced
1/4 tsp Salt

INDIVIDUALLY (ready to use):
Pinch of dried oregano
2 tbsp all-purpose flour
2 cups vegetable stock
1/4 cup milk (whatever you have)
1 tbsp nutritional yeast (optional)
Freshly ground black pepper

PREPARATION

1. Over medium heat cook DEEP SAUCEPAN, stirring occasionally, until onion is browned and caramelized (but not burnt) — 10 to 12 minutes.

2. Whisk in oregano and flour and cook (whisking constantly) until the flour is fully absorbed — 30 seconds to 1 minute.

3. Whisk in vegetable stock and milk, raise heat to high and bring to a boil (whisking occasionally).

4. Immediately reduce heat to a simmer and cook (whisking occasionally) until the stock thickens into a gravy that thinly coats the back of a spoon — about 5 minutes.

5. Whisk in nutritional yeast (if using) and taste for seasoning. Add more salt and pepper as desired. Serve hot.
